Is it possible to know what percentage of an application is scanned?

Unfortunately this information is not available today. During the pre-scan, the scan engine determines the data model to scan. You can check the assessment summary for each scan, which shows how many modules were included in the static scan analysis, how many call sites were in the modules, and how many of those call sites are vulnerable.
